Rapid allows easier production of cakes and results in better looking cakes with fine, light and moist cake texture. Therefore Rapid is especially designed for all-in mixing for Swiss rolls, sponge cakes, pound cakes and plain flour cakes. Rapid also provides excellent flavour and fresh keeping qualities of the finished product. Rapid is to be added in a cake batter at a dosage of of 3% – 8% on flour weight with the all-in method. When prepared and packed well, the cake products will retain their quality and therefore their sales value for longer time.
